I always have a hard time with getting in enough vegetables. Especially with an "E" meal! I just prefer the buttery veggies. This Harves Veggies dish, however, is a perfect solution for me to include with ANY meal, as it's a perfect blend of mixed, soft veggies, that are so aromatic and rich in flavor that they require no butter, since the cooked okra gives it a silky, smooth texture. If you have this vegetable side dish with a THM S meal, butter is certainly an option, but really, it's yummy on it's own. These veggies freeze nicely, so go ahead and mix up a big bath and keep them on hand!

I like them with any meal, including with eggs for breakfast!

Another way to enjoy them, would be to add chicken broth to the mix, along with shredded chicken and enjoy it as a hearty soup dish!


INGREDIENTS:
2  diced yellow squash
3 diced zucchini
1 chopped, green bell pepper
1/2 chopped red onion
1 can stewed tomatoes
1 16 oz. bag of chopped, frozen okra
1 tsp sea salt
1 tsp onion powder
1/2 tsp ground thyme
1/2 tsp ground cardamom 

INSTRUCTIONS:

Place all veggies, except stewed tomatoes, into a large pot, with enough water to cover them, and simmer until veggies are soft, but not mushy. Then drain the water out. Add the can of stewed tomatoes, just after chopping them with a knife, while still in the can. Finally, add the seasoning and cook on low for about 10 more minutes.

THM-FP (optional S) Inspired Pumpkin Spice Oolong Latte

INGREDIENTS:
2 bags Oolong tea, steeped in 1 cup hot water
2 round TBSP canned pumpkin
1.5 TBSP Erythritol
4 heavy doonks Stevia
3 heavy shakes of pumpkin spice seasoning
1 heavy shake of cinnamon
pinch of sea salt
1/2 scoop whey protein isolate (optional)
1 tsp vanilla extract
1 cup unsweetened cashew or almond milk

RECIPE INSTRUCTIONS:

Mix together all ingredients, using your blender.

Note: The nut milk is going to cool it down a bit, so warm it back up, if desired.
Optional topping: Low Fat RediWhip and a light shake of pumpkin spice or cinnamon.

This drink can easily become a THM-S drink, if you added 1 TBSP MCT oil or heavy whipping cream, making it "oooooh so rich"!

THM-E Inspired Spicy Black Beans and Quinoa

You can throw this lunch together in a flash, or you can increase the recipe to feed the family or just to have extra for another day of the week. 
Here, I'm just going to share the recipe for 1.


INGREDIETS-

1/3 cup Quinoa and cook it according to directions
1 can Black Beans (use only half, after it's cooked)
1/2 tsp Onion Powder
1/4 tsp Garlic Powder
1/2 tsp Sea Salt
1/2 tsp Black Pepper
1/4 tsp Cumin
1/2 tsp Chili Powder
1/2 can Chicken Breast (6 oz,)

Optional-chopped scallions, sliced jalapenos, salsa and non fat Greek yogurt for topping.


DIRECTIONS-

Cook the quinoa according to package directions.
Mix the entire can of black beans with the seasonings and warm this on the stove. Do not drain the can. On the plate, start with quinoa, topped with half of the cooked beans, about 1/2 can of chicken breast. I didn't even warm the chicken. Just tossed it right on top. 



THM-S Inspired Chicken & Cabbage Soup

This is definitely "comfort food"! It's a family favorite around here. It is the most simple recipe that I have, yet it tastes like a lot of work went into it.

INGREDIENTS-

Whole, thawed chicken
Enough water to completely, generously cover the chicken
One whole, washed, sliced cabbage
One, whole sliced onion
Sea Salt
Pepper
Onion Powder
Garlic Powder
1/2 stick butter



DIRECTIONS-

Place chicken into the large pot and cover with generous amount of water and bring to boil. Allow this to cook for about 25-30 minutes, then pull the chicken out for de-boning.

Place the sliced cabbage and onion into the boiling pot of water, while you de-bone your chicken.

Place the chicken back into the pot and reduce the heat to medium temperature.

Add all other ingredients. I purposefully left out the measurements on the seasoning, as I suggest that you go with the amount that suits your taste buds. I like our soup to be pepper-y, so I add about 2 TBSP. I used about 1 TBSP garlic powder and 2 TBSP onion powder, 1 TBSP sea salt.

The soup should cook about another 25 minutes, to ensure that cabbage and onion have softened enough. The longer the better, though!! Go ahead and cover it and let it just simmer on low for a while, if you are not in a hurry, as this soup only gets better the longer it sits/simmers. If you manage to have any left over the next day, it's a great lunch!

Bullet Proof Oolong (THM Inspired S)

This warm cup of creamy, dreamy bliss in the afternoon, is sure to make you feel like you just got a "bonus" day!! My kids call this reaction a "Flabberday". It's when you wake up early on Saturday, have lots to do, then nap/rest and are able to enjoy the rest of a big day, thereby feeling as if you gained a completely new day! It's "Flabberday"!! This drink was inspired by, and is somewhere in between, the Shrinker and the Bullet Proof Coffee. I call it the Bullet Proof Oolong.

INGREDIENTS-

10-12 oz. Very Hot Water
2 Oolong Tea Bags
1-2 tsp MCT oil (This depends upon whether or not you've built up to the 2 tsp. Start slow.)
1 1/2 tsp Butter
1 tsp Vanilla Extract
Pinch Sea Salt
2 Good Shakes of Cinnamon (More if you like)
1-2 Light Shakes of Cayenne Pepper (I keep mine very light, but if you add more, it revs up your metabolism even more!)
2-3 tsp Sweetener "On Plan" 


DIRECTIONS-

After your two bags of tea have steeped for several minutes, pour the tea into your Ninja blending cup and add all other ingredients.

Blend for a few seconds, then "burp" your mix by unscrewing the cap to allow steam to escape. If you miss this step, you may find yourself cleaning up a hot mess in the kitchen!

Continue to blend well for about 30 seconds, into a creamy, dreamy bliss!!
